Nothing sparks a craving for comfort food like a natural disaster, and while I was lucky enough to have a working gas range while the power was knocked out, I couldn't make the thing I really wanted: sweet potato fries.

I'll order them practically every time I see them on a menu, so I'm pretty discerning about taste and texture. And the perfect combo of crispy outside, soft starchy goodness inside was something I despaired getting out of my oven—until now.

The key is to cut your fries thick, almost into wedges, and nuke them. The egg-white wash (turns out it isn't just for pies) will give you a crisp outer coating. Once you've got those basics down, you can play around with the spice mix and try Cajun-style (ancho chili powder and lime zest) or a sweeter version (cinnamon and a dusting of sugar) for a snack or dessert.

I went old-school and enjoyed them with Sir Kensington's Gourmet Scooping Ketchup, but they'd be just as good with a mustard-based sauce or avocado-based dip. But with so many possibilities, I'm not about to save these for only stormy days.

Perfect Baked Sweet Potato Fries Makes two servings

What you'll need: 1 large sweet potato, sliced into sticks or wedges 2 egg whites 1 tsp dried oregano 1 tsp dried thyme 1 tsp garlic powder 1 tsp sea salt enough oil to coat fries

How to make it:

1.  Preheat oven to 450 degrees. Line a baking sheet with parchment or foil and oil lightly.

2.  Place sweet potato sticks on a microwave-safe plate and cook for 1-2 minutes or until they're flexible.

3.  In a shallow bowl or container, whisk egg whites and all seasonings together until well blended. Toss sweet potato sticks in mixture but drain off any excess before placing them in a single layer on the prepared baking sheet.

4.  Bake for 10 minutes, then flip pieces and bake until golden brown, about 15 minutes.
